How to Store Pickles Through the Monsoon
Monsoon humidity is the number one reason homemade and store-bought pickles spoil early. Always use a completely dry spoon every time you serve, keep the oil layer topped up above the pickle line, and store the jar in a cool, dark cupboard rather than near a stove or window. If you notice the oil separating or a white film forming, that's an early sign of moisture contamination — refrigerate immediately and consume within a week.
